Chocolate and Zucchini Cake

I have an abundance of zucchini right now.  If you garden, or have neighbors who garden, you may be swimming in it too.  I've been making copious amounts of veggie burgers (my recipe here) for fresh eating and for the freezer.  And lots of zucchini breads.  Yesterday, I felt like something chocolaty.  SouleMama linked to a Chocolate and Zucchini cake recipe that sounded super scrumptious to me.  So I made it.  And I loved it!

What's your favorite thing to do with zucchini?!

ok this may be silly...
do u bake them and then freeze them? sounds like something im going to have to make! :)

not silly at all!! for both veggie burgers and breads, you bake them and then freeze them. the veggie burgers thaw and heat nicely in the toaster oven, and the breads can just thaw out in their good old time!

Do you think they would taste ok without summer squash but more zucchini?

Zonnah - Oh yes! Definitely! I make it with just zucchini, with just summer squash - whatever I have most of at the time! Good luck!

i made the choco zucchini cake. its a little dry (probably cooked too long) but it sure is tasty!!!
